Head Chocolatier Nicholas mingles three distinct varietals of sun-dried grapes — plump, mild Goldens; chewy, sweet Crimsons; and large, intensely fruity Red Flames — each bringing its own character. He pairs the trio with 70% Anamalai, India chocolate, selected for its raisiny, warm spice notes that deepen the blend's natural complexity.
Our Confections team pours the tempered chocolate over the mixed raisins as they tumble in a rotating drum, a technique called panning. To build the ideal 1 to 1.5 fruit-to-chocolate ratio by weight, they apply 160 coatings over the course of two hours — until it’s just right.
